Sweet Potato Chips Aren’t Just For Snacking!

Sweet potatoes are honestly one of my favorite things on this earth. I love them baked, roasted, stuffed and in fry form. So, I was surprised when I tried sweet potato chips and found out I didn’t really like them. As a committed salty snack lover, I just found them oddly too sweet for my taste. Even though it will never be my favorite snack, I still buy a bag from time to time because taste buds change with time. Now, I almost always have a bag of sweet potato chips in my cabinet so I can make this Sweet Potato Chip Crusted Chicken any night of the week!

Don’t Burn The Crust

The trickiest part about crusted chicken recipes is not burning the breading before the chicken is cooked! This proves to be even more challenging if you’re using something that’s already cooked to coat the outside! The natural sugars in sweet potatoes definitely make them a higher burn risk! Don’t worry I’ve tested this recipe several times to ensure you won’t have burnt chicken! It all comes down to where you place the chicken in the oven and using the right temperature. Sweet Potatoes Don’t Have To Be Sweet.

Sweet potatoes are way more versatile than I think Americans give them credit for. They are so good in savory meals. My boyfriend and I love this chicken by itself. I rarely serve it with a sauce. If you’re looking for something to dip this in my first suggestion is my Balsamic Beet Ketchup! Or you can go for honey mustard or BBQ sauce! The versatility of this chicken also means you can pair it with whatever side dishes you like! It’s also great on top of salad! Sweet Potato Chip Crusted Chicken

Sweet Potato Chips are crushed and mixed with a few spices for a unique twist on crusted chicken breast.

Ingredients
  

The Chicken

  • 1-1/2 lbs Boneless Skinless Chicken Breast, cut in half lengthwise. breast are normally sold in packs of two so you should have 4 pieces after cutting them.
  • Salt
  • Pepper
  • Garlic Powder
  • Onion Powder

Sweet Potato Chip Crust

  • 1 7oz Bag of Sweet Potato Chips salted or unsalted whatever you prefer.
  • 2 tbsp cornstarch or flour
  • 1 tsp salt optional, see notes
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika, optional, see notes
  • 1 large egg
  • Cooking Oil spray

Instructions
 

Check & Preheat Oven

  • Move an oven rack to the upper middle portion of your oven.
  • Now, preheat your oven to 400 degrees.

Prep Chicken and Breading.

  • Place an oven safe baking rack over a large baking sheet. Spray with cooking oil spray and set aside
  • Pat your chicken dry with paper towels. Lightly season both sides of each piece of chicken with salt, pepper, garlic powder, and onion powder. Set aside.
  • Add sweet potato chips to a food processor, blender, or large ziplock bag. Crush chips until they're small uniform flakes. Should look similar to crushed cornflakes.
  • Transfer crushed chips into a large dish or large shallow bowl. Add in cornstarch, or flour, salt, pepper, garlic powder, onion powder, and smoked paprika. Mix well to combine.
  • Crack your egg in a separate large shallow dish and add a pinch of salt and pepper. Wisk egg until it is well beaten.
  • Now, set up and assembly line in this order; chicken, egg, sweet potato chip mixture, baking sheet.

Bread & Bake Chicken

  • 1. Dip one piece of chicken into the egg mixture. Make sure both sides are covered in egg and let any excess drip off.
  • 2. Now place chicken into sweet potato chip mixture, being sure to pat the crust on firmly. You'll need to flip the chicken 3-4 times while firmly pressing coating on to achieve a nice crust.
  • 3. Once chicken is nicely coated, gently place it on your prepared baking sheet.
  • Repeat steps 1-3 with remaining 3 breast.
  • Once all chicken as been coated, take any remaining sweet potato chip mixture and press it on top of the chicken to cover any remaining holes.
  • Give the chicken a good spray with oil to help seal the crust.
  • Now place the chicken into the oven on the upper middle rack and cook for 18-20 minutes, until chicken is cooked through.
  • No flipping is needed, but check chicken at 10 minute mark and make sure the crust is not. browning to fast. If it is, simply lay a sheet of foil over the top and continue cooking.
  • Once done, remove chicken from the oven and let rest on baking sheet for at least 5 minutes. This will allow the crust to cool and get crispy.
  • Serve with sides of your choice and enjoy!

Notes

Only use sweet potato chips that have sweet potatoes, oil, and salt. Chips with added sugar may burn.
Taste your chips for saltiness before crushing them. You may not need to add salt to the mixture depending on the brand of chips you’re  using.
I highly recommend using the smoked paprika for a small smoky sweet kick. It won’t be spicy, but it add a very nice flavor contrast. If you don’t have it you can instead use a very small pinch of cayenne pepper instead and a 1/2 tsp of sweet paprika.
