Chicken Cacciatore Is The Perfect Meal

In my opinion, Chicken Cacciatore is truly and underrated dish. It has chicken, vegetables, olives, wine, and tomatoes. The harmony of all those ingredients together and the smell it leaves in your kitchen is incredible. Chicken Cacciatore is elegant enough to wow your significant other, impress dinner party guest, and it’s easy if you just want to make a nice family dinner.

My first memory of this meal screams romance! My dad would make my mother chicken cacciatore every year for Mother’s Day, or maybe it was her birthday? Either way, I thought this dish was special and we never had it for dinner unless my dad made it. Now that I am able to make it myself, I still only do so a few times a year so it doesn’t loose it’s magic!

Years later, I stumbled upon my own version by accident. I was racking my brain one evening trying to decide what to make for dinner. Eventually I decided on chicken, but because of poor planing the chicken was still frozen so my options were limited . By taking a hard look at all the produce in my fridge I realized that I could create my own Chicken Cacciatore recipe!

My version of this recipe was developed in my pressure cooker. If you don’t have one don’t worry! The recipe will include notes on how to successfully make this on the stove-top while finishing in the oven.

Chicken Cacciatore is a great way to venture away from weekly spaghetti or Chicken Parmesan, while still sharing some of those same familiar flavors. It’s a one pot dish, which from my experience everyone loves! All you have to do is boil some pasta to serve with it.

Bone In Skin On OR Boneless Skinless Chicken!?

Some recipes say you need to have boneless skinless chicken and others say bone-in skin on chicken is the way to go. For this, I say go with what you want or have. When using bone-in chicken, do increase the cooking time about 5 minutes because you want to make sure the meat around the bone is done!

Don’t forget the fresh parsley!!!! The addition of parsley at the end just adds a hint of freshness! If you don’t have parsley or don’t like the taste, basil would be great too!

Ingredients
  

  • 1 1/2-2 pounds of chicken thighs or breast .
  • 1 medium onion chopped
  • 1 bell pepper chopped
  • 1 large carrot chopped
  • 8 oz of mushrooms sliced
  • 3 cloves of garlic chopped
  • 1/2 cup katamala olives pitted, rinsed and sliced. (Optional)
  • 1/4 cup dry red or white wine
  • 1 14.5 once can of crushed tomatoes.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • Pinch of red pepper flakes
  • Salt
  • Pepper
  • Oil
  • 2 tbsp fresh parsley chopped (Optional)

Instructions
 

  • Preheat pressure cooker on sauté mode.
  • Pat chicken pieces dry. Drizzle both sides of chicken with oil and season with salt, pepper( garlic powder and onion powder are optional but I use those as well.)
  • Once pot is hot, add a little oil and add chicken and brown 4 minutes on one side. Turn and brown another 3-4 minutes. remove chicken and set aside Repeat with any remaining chicken.
  • In same pot, add one more tablespoon of oil and add in onions, pepper, carrots and mushrooms with a large pinch of salt. Stir occasionally cooking 5-8 minutes until veggies are soft
  • Season mixture with rosemary, oregano, pepper, and red pepper flakes. Cook for another 1-2 minutes while stirring occasionally.
  • Add in garlic and stir frequently for 1 minute.
  • Add wine to the pot and stir making sure to scrap up any brown bits stuck on the bottom. Let wine cook 2-3 minutes.
  • Add crushed tomatoes and olives and stir to combine. Taste sauce and adjust seasonings if needed.
  • Add chicken back to pot, seal and set pressure cooker to manual high pressure for 15 minutes.
  • Once pot is done, let it naturally release for 10 minutes. After that turn valve and release any remaining pressure.
  • Stir in fresh parsley just before serving!
  • Serve over pasta and enjoy!

Notes

Note, some tomatoes are more watery than others. If sauce is too loose after cooking; remove chicken and set pot back to sauté function. Let sauce simmer for 10-15 minutes until thicken to your liking! Enjoy
 
Want to make this without the pressure cooker?
  • Preheat oven to 375 degrees.
  • Follow instructions for 1-8 using a large oven safe pan with deep sides. Cook using medium heat
  • Once you get to step 9, add chicken back to pan and transfer the pan to the oven
  • Let cook uncovered in the oven for 20- 30 minutes.
  • Remove from oven, temp chicken for doneness. Stir in parsley and serve!
