Simple Curry Chicken Salad
Chicken salad isn’t something I eat often, I think it’s delicious, but it’s just never on my radar come lunch time. While out shopping one day at my favorite grocery store I noticed organic canned white meat chicken on sale! Knowing that this was just a specialty item I may not see for a while I quickly grabbed 4 cans for my pantry. Months later, I got the idea for this chicken salad because I wanted to use up some plain yogurt in my fridge. So I went digging in my pantry and this simple salad was born. You can always add more to it like vegetables and fresh herbs, but I wanted this to be quick! I also like the flexibility of having this as a sandwich, wrap, or over a bed of greens all with fresh crunchy veggies of my choice! I hope you enjoy this curry chicken salad.
Prep time: 5 minutes plus 1 hour refrigerated
Ingredients
- 2 5oz cans of white meat chicken in water, drained
- 1 small apple chopped
- 1/2 cup plain yogurt
- Hot or regular curry powder
- Salt & pepper
Combined all ingredients in a bowl and sir to combine. Start with 1 tablespoon of curry powder, taste and add more if needed. Transfer to airtight container and refrigerate for at least 1 hour, up to overnight before serving. Serve with fresh vegetables, cilantro, and anything else you like! Enjoy!
